Proximate and sensory analysis of wheat bread supplemented with Nigella sativa oil and Nigella sativa extract

Wheat is one of the important food crops worldwide while wheat bread most commonly consumed form it in different populations. As Nigella sativa rich several phytochemicals that possess disease preventive properties hence, the proximate and sensory analysis breads supplemented with extract oil have been discussed this study. famous medicinal plants has used for treatment various illnesses parts world. Compositional revealed contains 14.75% moisture content, 10.32% crude fat 4.40 % ash 3.55 fiber, 11.89% protein 55.09% Nitrogen Free Extract (NFE). In comparison, 14.23%, 10.53% 4.10% 3.20 11.79% 56.15% NFE. Sensory evaluation was evaluated using 9 points-hedonic scale. Maximum score overall acceptability recorded fortified bread. meantime, requests wheat-based items value addition are developing quickly previous couple decades, as customers understood eating foods medical advantages superior to taking medicine. The will not only meet consumer demands terms attributes but might also aid improving their health.
